WEEKS FAMILY BEEF

James Wilson Hilliard "Willis" was born in 1886 on his parent’s farm in Old Fort, TN. In 1893 at the age of seven they sold out and moved south of Dodd City, Texas. He worked on his /Father, James Buchanan Hilliard's, 700 acre dairy/farm until he married Lillie Dale Knowles in 1923. At this time his dad gave him 100 acres south west of Dodd City to start his own dairy/farm for his growing family.

In 1941 Willis bought 200 acres of land 2.5 miles south of Dodd City to expand his current dairy/farm. His 3rd child Johnie Wilson Hilliard would take over operations completely by 1957.
Johnie who had milked cows since he was big enough to work did not wanting the restraints that come with a dairy, so he began the transition to a beef herd. He would continue the beef herd operation until his passing in April of 2021.

At this point Andy and Sherri Hilliard Weeks purchased the farm and the legacy herd. It was our desire to start marketing beef directly to the consumer and began exploring ways to improve the quality of meat. This was done by introducing a red angus influence to the herd and also adding a few of the highly marbled Japanese Wagyu to the operation.
We are on the sixth generation of cattle raisers south of Dodd City, Texas and it is our desire to offer beef of the highest quality direct from our farm to your freezer.
